Dijon mustard<\/span><\/p>\n<p style=\"color: #555555;\"><span style=\"color: #000000;\">&#8211; 2 tsp. rice wine vinegar<\/span><\/p>\n<p style=\"color: #555555;\"><span style=\"color: #000000;\">&#8211; Olive oil cooking spray<\/span><\/p>\n<p style=\"color: #555555;\"><span style=\"color: #000000;\">&#8211; 2 large eggs<\/span><\/p>\n<p style=\"color: #555555;\"><span style=\"color: #000000;\">&#8211; 2 Tbsp. water<\/span><\/p>\n<p style=\"color: #555555;\"><span style=\"color: #000000;\">&#8211; 1 pound chicken tenders<\/span><\/p>\n<p style=\"color: #555555;\"><span style=\"color: #000000;\">&#8211; 1 cup whole wheat Panko\u00ae\u00a0bread crumbs\u00a0<\/span><\/p>\n<p style=\"color: #555555;\"><span style=\"color: #000000;\">(Japanese-style bread crumbs)<\/span><\/p>\n<p style=\"color: #555555;\"><span style=\"color: #000000;\">&#8211; 1\/2 cup sliced almonds, finely chopped<\/span><\/p>\n<p style=\"color: #555555;\"><span style=\"color: #000000;\">&#8211; 1\/4 tsp. sea salt<\/span><\/p>\n<p style=\"color: #555555;\"><span style=\"color: #000000;\">&#8211; 1\/4 tsp. ground black pepper<\/span><\/p>\n<p style=\"color: #555555;\"><span style=\"color: #000000;\">&#8211; Combine honey, Dijon mustard, and rice vinegar in small bowl; mix well and chill.<\/span><\/p>\n<p style=\"color: #555555;\"><span style=\"color: #000000;\">&#8211; Preheat oven to 425\u00b0 F. Line baking sheet with foil; spray with cooking spray.<\/span><\/p>\n<p style=\"color: #555555;\"><span style=\"color: #000000;\">&#8211; Place eggs and water in medium shallow bowl; beat lightly.<\/span><\/p>\n<p style=\"color: #555555;\"><span style=\"color: #000000;\">&#8211; Soak chicken pieces in egg mixture; set aside.<\/span><\/p>\n<p style=\"color: #555555;\"><span style=\"color: #000000;\">&#8211; Combine bread crumbs, almonds, sea salt, and black pepper in large resealable plastic bag and shake to combine.<\/span><\/p>\n<p style=\"color: #555555;\"><span style=\"color: #000000;\">&#8211; Working with a few pieces at a time, lift chicken from egg mixture, letting excess drip back into bowl, and drop into bag containing bread crumb mixture. Seal bag and shake to coat; repeat with remaining chicken.<\/span><\/p>\n<p style=\"color: #555555;\"><span style=\"color: #000000;\">&#8211; Place chicken on prepared baking sheet.
